Fajitas are one of my favorite foods and this is the only marinade I use! It's a pretty quick and simple meal but so delicious! If you have been to my house for dinner in the last 5 years, chances are you've had it! I got the idea to add mushrooms to the mix from my brother-in-law John (he hates bell peppers so he caramelizes mushrooms in their place) and it has stuck.
Klark is an old friend of mine. We dated for awhile way back in the day and have remained friends. He has recently moved to Alabama for work and gotten engaged! I am so happy for him! I'm not really sure Klark can claim this recipe as I know he stole it from his middle school AND high school sweetheart Tiffany... I guess I'll give them both credit! They are both awesome people!

Klark would like to point out that he adds bell 'peppers' to his version. I don't know what they are making at the Elton household with 'pepers'
